Parmesan-Crusted Zucchini recipe
Ingredients:
1 tablespoon olive oil
1 pound green zucchini, thinly sliced
2 eggs, lightly beaten
½ cup grated Parmesan cheese
¼ cup bread crumbs
1 teaspoon salt
½ teaspoon black pepper
Preparation Instructions:
1) Preheat oven to 450°F. Lightly grease a baking sheet with olive oil.
2) Place beaten eggs in a large bowl; set aside. Combine cheese, bread crumbs, salt, and pepper in a separate large bowl; set aside.
3) Coat zucchini slices in egg wash, shaking off excess. Toss in cheese mixture to coat. Arrange zucchini in a single layer on prepared baking sheet. Bake 20 to 25 minutes, until light golden and slightly crisp. Serve warm.
