Zucchini Coleslaw recipe
Ingredients:
2 cups of zucchini, coarsely shredded.
2 cups of cabbage, shredded.
1 medium carrot, shredded.
2 green onions, sliced.
½ cup of radishes, thinly sliced.
1/3 cups of light mayonnaise.
1/3 cups of mild picante sauce.
½ teaspoon of ground cumin.
Preparation Instructions:
Drain the zucchini by pressing between layers of paper towels.
Place in a large bowl and combine with the cabbage, carrot, onions and radishes.
In a bowl, combine all of the remaining ingredients; pour over the vegetables and toss thoroughly.
Cover and chill.
